What I learned about brownies today.

This is going to be a short one, because most of today’s class was a reiteration of last week’s lesson on cookies.

Brownies are a bit of an odd thing, more than a cookie, less than a cake… but the process for making them requires little explanation. except for one thing.

Many brownie recipes you see will contain no chemical leaveners, such as baking soda. It’s of great importance to incorporate air into your mixture… otherwise, your brownie will be little more than a flat pan of fudge with flour. That’s kind of gross.
