Best chocolate cookie recipe →
I found what would become my favorite cookie recipe by following a sex blogger’s twitter? Well, this is the internet, anything can happen. I know that food.com and the like will have many things labeled “best _____ recipe”, and many of them aren’t even good recipes but, seriously, these are lovely. I’ve been looking for a chocolate cookie recipe that holds up well...

Also… I follow everyone back! You are all my friends as far as I’m concerned :) But since I haven’t touched tumblr in a while, I am behind on that. Drop me a line if you follow me but I don’t follow you, I’ll rectify that ASAP. Meaning, after class. I think I hear Chef aproaching, finally! ‘3’ /treats tumblr like LJ

Reopening soon!
Looking at my tumblr dash for the first time in a long while because I am bored, Chef Mike is late this morning and twitter stopped working on my phone. I haven’t taken food photos in a while but I plan to resume doing that, and even so I have a backlog of things to post. If anyone cares anymore, expect many posts in the next week!

What I learned about cakes today.
Cake is a many-splendored thing, there are so many different types, and so little could be covered in the meager three hours during which my pastry class meets. These are only the very basics. Of course, with anything you make, the ratio of ingredients is important, but to cake, this is the be-all end-all determinant of texture, as mixing method is in the other items I have discussed. Cookie and...

What I learned about brownies today.
This is going to be a short one, because most of today’s class was a reiteration of last week’s lesson on cookies. Brownies are a bit of an odd thing, more than a cookie, less than a cake… but the process for making them requires little explanation. except for one thing. Many brownie recipes you see will contain no chemical leaveners, such as baking soda. It’s of great...

What I learned about cookies today.
Most folks reading this tumblr know that cookies are one of my favorite things to produce… but, surprisingly, there were many things I did not know about them! Texture is becoming a common theme in these, isn’t it? Often related to fat. (Or applesauce, which can replace oil in cakes and brownies, but we’ll get to that later.) In the case of most conventional cookies, the...

What I learned about biscuits today.
(using “biscuit” in the American sense, here.) Yes, I also made pumpkin bread, but… a quick bread like that one is basically just a muffin in a loaf pan. So, that’s all been covered. Biscuits are similar to muffins in that they are simple. Too simple. It’s almost creepy how simple they are, and the easiest way to mess them up is by saying, “it can’t be...

What I learned about muffins today.
About muffins. Everything here also applies to muffin-like quick breads. Partially because some were curious as to what I’m learning in class, partially for me to look back on before my midterm exam. Texture: A common problem with muffins, and other bread products made by the muffin method, is a dense or gummy texture. There are many possible causes to this. Overmixing is quite easy to do...
